This recipe is nothing new; you’ve probably already seen some variations. I wanted to share it with you anyway, in case you haven’t tried it yet, as this way of eating dates is brilliant and HIGHLY satisfying.
Dates combined with peanut butter taste like peanut butter cups (or even better.) They are super quick to make, naturally vegan, gluten-free and delicious.
This is my number one choice when I crave something sweet, and it never disappoints!
Dates are high in minerals such as iron, calcium, manganese, potassium, copper and vitamin B5, which are needed to keep us healthy and thriving. They are the true meaning of nature’s candy, making them a fantastic alternative to processed sweets.
I usually go for Medjool dates because they are widely available, and if you are lucky, you can find some really “meaty” ones, which would be perfect for this recipe.
Another essential ingredient is peanut butter. I usually go for brands that add nothing else, just peanuts. You can use any other nut butter, but from my experience, only peanut butter gives the same hit as peanut cups do! Peanut butter, in general, is a good source of healthy fats, some protein, Vitamin E, B6, magnesium, iron and selenium. It makes a pretty healthful addition if you don’t have any individual sensitivities.
I used powdered freeze-dried strawberries, pomegranate, and cacao, full of antioxidants for toppings, making this treat even more yummy and health-promoting. But the best part is that you can use any toppings you like! Sometimes, I put a dash of salt on my stuffed dates, keeping it simple.
Peanut Butter Stuffed Dates
Ingredients
- 6 dates Medjool
- 6 tsp peanut butter
- 1 tbsp freeze-dried strawberries powdered, optional
- 1 tbsp cacao optional
- 1 tbsp pomegranate seeds optional
- 1 tsp salt optional
Instructions
- Carefully remove the pits from dates.
- Cut a slit and add a teaspoon of the peanut butter.
- Sprinkle with the toppings of your choice and a small pinch of salt.
- Place in the freezer for at least an hour and enjoy chilled.
