Ingredients
  

  • 1 cauliflower medium, chopped
  • 1 red bell pepper diced
  • 1/2 cup red onion diced
  • 1 bunch parsley minced
  • 1/3 cup walnuts soaked
  • 2 cloves garlic minced
  • 1/3 cup cranberries or raisins dried
  • 1/3 cup fresh lemon juice
  • 1/4 cup olive oil extra virgin
  • 1/2 cup cucumber diced
  • 1 tsp salt and pepper

Instructions
 

  • Finely chop all the ingredients and place them in a large bowl.
  • Add olive oil, lemon juice, salt and pepper.
  • Toss all the ingredients well together and enjoy!
