I’m a massive fan of creamy soups, and I like them in many variations. This soup is made of nourishing but simple ingredients. Cauliflower and butter beans are packed with fibre, which is vital for our gut health. A diet high in fibre is associated with increased human microbiota diversity, which is essential for our immunity and survival.

A wide diversity of gut microbiota promotes good bacteria that can help fight inflammation, make nutrients, metabolise hormones and neutralise pathogens. All of these factors can affect skin health and appearance.

Fibre also helps regulate the rate of sugar metabolism, keep energy on an even keel, and prevent blood sugar peaks and crashes. So if you are trying to improve your fibre intake, this soup is perfect.

I also want to bring to your attention the fantastic qualities of butter beans. Butter beans are not only good source of protein and carbs, but also manganese, iron, zinc, magnesium, potassium, phosphorus and B vitamins like thiamine, riboflavin and folate. Adding them to the soup adds extra creaminess to the texture and makes your meal complete.

Fibre-Boosting Butter Bean Cauliflower Soup

Cauliflower and butter beans are packed with fibre that is so important for our gut health. Diet high in fibre is associated with increased human microbiota diversity, which is essential for our immunity and survival.

Ingredients
  

  • 1 cauliflower chopped
  • 1 onion chopped
  • 2 cloves garlic diced
  • 1 can butter beans
  • 1 tsp olive oil extra virgin
  • 2 tsp cumin
  • 1 tsp pepper
  • 1/2 tsp salt
  • 2 tsp tamari sauce
  • 1 L vegetable broth
  • 2 tbsp nutritional yeast
  • 1 tsp sesame seeds
  • 1 handfull sprouts

Instructions
 

  • Chop the cauliflower into florets. Also roughly chop an onion and garlic.
  • Heat the olive oil in a pot over medium heat. Add onion and garlic and then cauliflower. Sauté for about 5 minutes.
  • Add beans and all the spices.
  • Add veggie broth and simmer on low for about 15 minutes.
  • Once cooked, give it a good mix and let it cool down.
  • Place it in a blender and add some nutritional yeast.
  • Blend it until you achieve a creamy consistency.
  • Garnish with some white sesame seeds and sprouts.
